ABOUT CELIAC DISEASE

For those of you that have been recently diagnosed with Celiac Sprue, gluten intolerance, dermatitis herpetiformis, or wheat allergy this information may help you in a pinch. Other terms you may be familiar with and be searching for, may not be what you actually have as Celiac Disease can mimmick many things. If you are searching for any of these terms celiac disease, poor health, celiac sprue, gluten intolerance, dermatitis herpetiformis, digestive diseases, flour allergy, wheat proteins, diverticulitis, diverticulosis, stomach pain, fatigue, lack of energy, or generally just not feeling right then give Celiac Disease a read, and see if you are possibly looking in the wrong direction. Like I was, for many many years. Searching my symptoms like nausea, vomiting, constant fatigue, and cramping Anything I was feeling, popped it into the search engines and read all articles I could find to see what has them ALL. I am no expert by any means, however I have found enough in my life now to be able to function, however, still not 100% as I "cheat" alot. By "cheat" I mean, I eat stuff I shouldn't. So, when I start to feel better, I eat something I shouldn't. Then I start feeling like crap so I go back to the stuff I'm supposed to eat. Which tastes like crap! Then it starts all over again. I ate regular food all my life, it's been my poison, but it's what I'm used to. It is getting a little easier with the new products their coming out with, but it's a very hard transition to make.

Everything in this site, including meal prep and suggestions on brands, are strictly my opinion and in no way am I saying this is the gospel as I myself am still learning. I don't have the luxury of the pocket diary that you really should get. The one that helps you pick the correct foods. Focusing on a strict gluten free diet is not easy. Also, the grocery stores are getting more and more involved and they offer sections with gluten free foods. You should check with your nutritionist if you feel something isin't right with what I have here. I will take any suggestions to change something if you find I have incorrectly posted information. For over 20 years I was sick. Not bedridden sick, but sick noticeably on a daily basis. The symptoms changed over the years but the pain was progressive. It just got worse each time. There was always something hurting. To top it off, because it was an underlying condition that was getting worse, it seemed the issues at hand were actually worse than what they really were. Some days I couldn't eat. Somedays I had pain so bad I couldn't move. Somedays I was fine. Let me tell you though, being sick in some way everyday becomes a part of your life that you learn to deal with, and hide from most people. Losing jobs because of too much time off. Not being able to get a doctors note because they didn't know what was wrong! So needless to say, many doctors visits, and I mean many!..Lots of tests, I even had surgery over 23 years ago, which recently came to light as possibly not being required. Knowing now what I do, I feel the surgery could have been prevented had a diagnosis been able to come to light. Read on, and check out what's here. I hope what you find here is helpful...

I also found some great gluten-free cookies called Sans Gluten free made by Glutino. Chocolate wafer cookies, they are great! It's nice to have an alternative snack food available quick.
